I LOVE muffins. But, with all the sugar they are not very good for you. Here is a recipe that is not only good for you but tastes great and only has 137 calories per muffin.
1 TBS flax seed
1 cup of berries (I love blueberries, or strawberries)
1 cup quick oats
1 cup skim milk
1 cup whole wheat flour
1 tsp baking powder
1/2 tsp baking soda
1/4 cup of unsweetened applesauce
3/4 cup brown sugar
1 tsp vanilla
Preheat oven to 375 F
Wash and chop up berries.
Grind flax seed. Do not over grind to a powder, just chop it up a little.
In a small bowl combine oats and milk. Set aside.
In a medium bowl combine flour, baking powder, baking soda.
In a large bowl beat egg, applesauce, brown sugar, vanilla. Slowly beat in milk and oats. Than add flour mixture.
Stir in berries.
Spray muffin pan with non stick spray or line with paper liners.
Spoon out mixture. I use an ice cream scooper just to get equal amounts of the mixture into each liner. Mixture Makes 12 muffins.
Sprinkle flax seed on each muffin.
Bake 20-25 minutes
