Acorn Squash Stuffing!

This has to be one of my favorite recipes! It's very filling and is the perfect fall dinner. I love it anytime of the year also. It's funny because I didn't even like Acorn squash before I tried this. And now I love it! I got this recipe from a local chef in my area. At a cooking class!

Recipe makes two large servings:

1 acorn squash
1/2 LB of ground beef, I also love to use ground pork!
1 cup of peeled chopped apples
2 TBS water
2 tsp cinnamon
3 TBS melted butter
a pinch of both salt and pepper
Brown sugar to sprinkle on top

Preheat oven to 375F Cut acorn squash in half. Clean out seeds and strings. Place on a greased baking sheet, face down. Bake for 50-60 minutes.

Meanwhile in a skillet brown ground beef. Add chopped apples, salt, pepper, cinnamon and water. Cook on low heat to soften apples.

When acorn squash is done baking. Let cool until you can touch. Spoon out squash and mix into the ground beef, apple mix. But, keep the outer "shell" intact like a bowl.

Mix ground beef and squash well. Cook on low heat for another 5 minutes. Spoon back into the acorn shells. Pour melted butter on top of each bowl. And sprinkle with brown sugar. Bake for another 25 minutes. Let cool and serve.

It will smell and taste just like fall.
